Zucchini Salad

There's really not much to this recipe.  I just thought it sounded good.  Also, Im a dolt and didnt realize that I didnt have parmesan cheese so, I substituted reduced fat cheddar jack.

Recipe from Eating Well
Yields 6 servings
135 calories per serving

1/4 c lemon juice
2 tbsp olive oil
1/2 tsp black pepper
1/4 tsp salt
2 lbs zucchini, cut into slices about 1/2 in thick
1/3 c parmesan cheese

Pour olive oil into a large pan & heat over medium high.
Saute zucchini until browned.
Place zucchini into a large bowl.
Pour lemon juice and toss to coat.
Season with salt & pepper & sprinkle cheese over top.
