1/4 c lemon juice
1/2 c reduced-sodium chicken broth
3 tbsp reduced-sodium soy sauce
2 tsp cornstarch
1 tbsp canola oil
1 lb boneless, skinless chicken breasts, cut into 1 in pieces
10 oz mushrooms, quartered
6 oz snow peas
1 bunch scallions, cut into 1 in pieces, white & green parts divided
1 tbsp chopped garlic
Whisk lemon juice with broth, soy sauce, & cornstarch in a small bowl.
Heat oil in a large skillet over medium-high heat.
Add chicken & cook for 4 -5 minutes.
Transfer to a plate & set aside.
Add mushrooms to the pan & cook for about 5 minutes.
Add snow peas, scallion whites, & garlic.
Cook for about 30 seconds.
Whisk broth mixture & add to the pan.
Cook for 2 -3 minutes until thickened.
Add scallion greens & chicken & cook for 2 minutes.
