Crispy Potatoes with Spicy Tomato Sauce

Ive been in the mood for potatoes the past two weeks but, this is a diet-friendly way to enjoy them.  The dipping sauce was a little too spicy for my liking but, it wasnt bad.

Yields 4 servings
150 calories per serving


INGREDIENTS
1 tsp plus 2 tbsp olive oil
6 cloves garlic, minced
15 oz crushed tomatoes
1/2 tsp paprika
1/2 crushed red pepper
1/2 tsp salt
1.5 lbs baby potatoes, cut into 1 in cubes
1/4 tsp freshly ground pepper

DIRECTIONS
Heat 1 tsp oil in a saucepan over medium heat.
Add garlic & cook for 1 minute, stirring.
Add tomatoes, paprika, crushed red pepper, & 1/4 tsp salt.
Adjust heat so sauce is simmering. 
Cook for 15 - 20 minutes, until sauce thickens to the consistency of ketchup.

Meanwhile toss potatoes, pepper, & remaining salt.
Heat the remaining 2 tbsp oil in a large skillet over medium-high heat.
Reduce heat to medium & add potatoes.
Cook for 15 - 20 minutes until the potatoes are crispy & tender.
