Pasta Spinach Salad

This is the tastiest salad Ive ever tasted in my life.  It's so simple but, the ingredients are so fresh that it made all the difference.  I am so excited to take this for lunch this week!

Yields 8 servings

INGREDIENTS
1 box whole wheat rotini
2 medium tomatoes, seeded & chopped
1/2 c feta cheese
1/3 c low calorie Italian dressing
1/4 c scallions, sliced
6 c baby spinach
Cracked black pepper

DIRECTIONS
Cook pasta according to package directions.
Drain, rinse with cold water, & place in a large bowl.
Add tomatoes, feta, dressing, & scallions.
Sprinkle with black pepper & toss.
Cover & chill for 2 hours.

Serve over spinach & enjoy!
