Yields 4 burritos

4 slices of bacon, chopped
1 c fresh mushrooms, sliced
1/2 c green pepper, chopped
1/4 tsp chili powder
4 large eggs
1/4 c tomato, seeded & chopped
4 8 in whole wheat tortillas
In a large nonstick skillet, cook bacon over medium heat until crisp.
Remove bacon from pan & let dry on a paper towel.
Leave all but 1 tbsp of bacon drippings in pan.
Add mushrooms, sweet pepper, & chili powder to the skillet.
Cook & stir for about 3 minutes, until vegetables are tender.
In a bowl, whisk eggs & pour over vegetables.
Cook for about 2 minutes over medium heat.
Stir in bacon & tomato & keep stirring until egg is cooked through.
Divide onto tortillas & roll up.
