Recipe from Eating Well
Yields 6 servings
340 calories per serving
INGREDIENTS
3 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
10 oz frozen, chopped spinach, thawed
3 c brown rice, cooked
1 c reduced fat shredded cheddar cheese
1/2 tsp black pepper
1/4 tsp salt
4 large eggs
1/4 c skim milk
DIRECTIONS
Preheat oven to 425.
Generously coat a 9 inch pie pan with cooking spray.
Heat oil in a large skillet over medium heat.
Add onion & cook, stirring frequently, until beginning to brown.
Add garlic & spinach & cook for 1 minute.
Transfer to a large bowl & add rice, cheese, pepper, & salt and stir to combine.
Whisk eggs & milk in a separate bowl.
Stir into rice.
Transfer to pie plate & smooth top with a spatula.
Bake for 25 minutes.
Let cool for 5 minutes before cutting into slices.
